Crystal glass jar or polypropylene glass jar: which material for which use?

BPA-free, crystal-clear SAN (styrene-acrylonitrile) plastic offers transparency comparable to glass, ideal for showcasing the colorful layers of a tiramisu, gazpacho, or salmon mousse. Unbreakable, it withstands over 1,000 wash cycles in a professional dishwasher. Polypropylene (PP), on the other hand, allows for solid colors (aqua, designer shapes) that add vibrancy to a cocktail table. Both materials are 100% reusable, food-safe, and comply with the requirements of the AGEC law on reusable tableware in the restaurant industry.

Choose the size according to the type of petit four being served.

2 cl to 5 cl: amuse-bouches, appetizers, cold soup shots, aperitif spoons.
6 cl to 10 cl: savory verrines (tartare, vegetable cream, ceviche), individual sweet verrines (panna cotta, chocolate mousse).
14 cl to 25 cl: complete desserts (tiramisu, fresh fruit, gourmet salad), bodegas for serving tapas or mocktails.
For a cocktail dinner, plan on 6 to 8 verrines of different sizes per guest to offer a variety of options.

AGEC compliance and obligations for professionals

Disposable plastic tableware is now banned. Since January 1, 2023, the AGEC law mandates reusable tableware for service in fast-food restaurants with more than 20 covers. Caterers, hotel services, and institutional food services are also encouraged to switch to reusable tableware for their on-site services.
