How to choose your kitchen trash can?

The collection of waste in the kitchen is an important point which is part of the application of the HACCP approach in out-of-home catering. Choosing a bin adapted to the HACCP approach and intended for professional use is therefore an almost implicit obligation.
The routing of food, prepared meals and the routing of waste must correspond to real logic to avoid any risk of cross-contamination.
The waste circuit must in no case cross the supply path for foodstuffs or dishes. This common sense rule is not always easy to apply given the location of the premises which are sometimes dilapidated and predate the new regulations.
The choice of kitchen bin(s) will be determined by the daily volume but also the space available and of course now the desire and/or obligation to set up selective sorting of waste.
The characteristics of a kitchen trash can that will comply with Haccp recommendations is first of all to be without direct contact of the hands with the dirty flow. It is therefore advisable to take a trash can with foot pedal control, or even better with cell control.
The trash can can be made of epoxy coated steel, stainless steel or plastic. In all three cases, the trash can must be easy to clean and disinfect.
